Ingredients
• 1 lb breakfast sausage
• ½ cored and diced red pepper
• 12 eggs
• ½ diced yellow onion
• 8 burrito tortillas
• Hot sauce
• 2 cup shredded cheddar cheese
Instructions
1. Begin the healthy breakfast burrito freezer by cooking the sausage in medium high. After it is browned, add onion and pepper. Cook for 3-5 minutes.
2. Lower the heat, add whisked eggs and stir until it is cooked.

Freezer Breakfast Burritos with Sweet Potato Hash and Black Beans

Ingredients:
For sweet potato and pepper hash
• ½ diced yellow onion
• 1 tsp extra virgin olive oil
• ¾ pound sweet potato, slice into 2 cup smaller cubes
• 2 pressed garlic cloves
• 1 chopped red bell pepper
• ¼ tsp salt
• ½ tsp smoked paprika
• ¼ tsp freshly ground pepper
For scrambled eggs
• 8 eggs
• ¼ tsp freshly ground pepper
• ¼ tsp salt
• 1½ tsp EVOO
For herbed goat cheese
• ½ tsp dried parsley
• ¼ tsp dried thyme
• 4 ounce goat cheese
• ½ tsp dried basil
• ¼ tsp dried rosemary
For serving
• 1½ cup cooked black beans
• Hot sauce or salsa
• 8 8-inch whole grain tortillas
Instructions:
1. To make the hash: add olive oil and cook onion for 2-3 minutes in medium heat. Add garlic, red pepper, sweet potato, paprika, pepper, and salt. Turn to medium low and cover. Wait for 8 minutes. Open and stir it occasionally until the moisture is evaporated and the sweet potato is golden in the edges.
2. For scrambled eggs: whisk all eggs in a bowl along with salt and pepper. Heat olive oil in medium heat, add the eggs. Cook it until well cooked.
3. For goat cheese: Stir dried herbs into the softened goat cheese.
4. For burritos: after warm the tortillas in microwave, add 1 tsp of goat cheese and it is followed with eggs, black beans, and sweet potato. Fold and serve the healthy breakfast burrito freezer for 8 serving with the sauce.
