Blueberry Protein Pancake

This healthy breakfast for athletes recipe is gluten-free and dairy-free, making it a great way to fuel up your day for your comfortable tummy!
Ingredients for healthy breakfast for athletes pancake:
• 1 egg
• 2 whites of 2 eggs
• 1/2 cup old-fashioned oats
• Salt
• 1 medium banana, mashed
• 1/4 tsp. vanilla extract
• 1/2 cup blueberries

Instructions to prep and cook this healthy breakfast for athletes recipe:
1. In a mixing bowl, add egg whites and eggs and beat or whisk them. Add salt, mashed banana, vanilla extract, and oats. Stir to combine.
2. Stir in the blueberries gently.
3. On medium heat, spray non-stick cooking spray in a pan or griddle. Pour the pancake batter into pan. Measure using 1/4 cup.
4. Cook the pancake until the underside turns golden brown and then flip over carefully to cook the other side. Once it is also set and golden brown, transfer to a plate. Do the same process for the remaining batter.
Note:
a. Let cool first, wrap in parchment paper, and store in a freezer zipper bag to freeze the pancake.

1. In a bowl, pour the strained plain Greek yogurt and add honey to taste. Set aside.
2. Toast the bread and drizzle with olive oil.
3. Across the slices, spread the reserve strained Greek yogurt. Follow by sprinkling the almond too. Arrange the figs carefully so each slice has plenty of them. Sprinkle more almonds. Use honey to drizzle the drier figs.
