This quick healthy breakfast on the go recipe is rich in lean turkey, celery, avocado, smoked cheese, and crunchy bell pepper. You can use cooked barley to substitute the farro.

Ingredients for this quick healthy breakfast on the go salad recipe:
• 1 cup farro
• 3 tbsp. shallots, finely chopped
• 3 tbsp. red-wine vinegar
• 1/4 cup extra-virgin olive oil
• 1 6-oz. slice deli smoked turkey, remove skin, cut 1/2" cubes
• 1/4 tsp. pepper, freshly ground
• 1/2 cup smoked cheese, diced
• 1 cup yellow bell pepper, chopped
• 1 large stalk celery, chopped
• 1 ripe and firm avocado, diced
• 3/4 cup sun-dried tomatoes

Instructions:
1. In a medium saucepan, place faro and add water to cover by 2 inches. Bring to a boil and stir. Reduce the heat to a simmer and then cook with no lid until the farro becomes tender, about 15-25 minutes. Drain the water, rinse and drain again.
2. In a large bowl, vinegar, whisk pepper, oil, and shallots. Add the farro, cheese, bell pepper, turkey, celery, avocado, sun-dried tomatoes and. Toss to coat.
